This book is inspired by and dedicated to the beautiful people I met during the summer of 2010 in Italy. The Castelle is a small place near Colere where my grandmother was raised. Colere is a comune in the Province of Bergamo in the Italian region of Lombardy, located about 90 km northeast of Milan and about 45 km northeast of Bergamo.
The Castelle was famous for its hand made casonsei. One evening I had the opportunity to capture Renato prepare a meal for some visitors.
This is the result.
There are many wonderful things to be discovered and experienced in life, the most rewarding and surprising are often the most simple and humble. Often overlooked and taken for granted in a world obsessed with extravagance. This simple dish defines the "less is more" creed.
